Las Palmeras Y El Mentol is a 3-hectare farm completely planted with coffee, a mix of Caturra and Bourbon varieties. The coffee is picked ripe and de-pulped either the same or the following day, then fermented for 20–25 hours dry. It is washed two or three times to remove the mucilage, and then it is dried under shade for 10–20 days. Splitting Jose’s microlot to roast some light and some dark has allowed us to explore different flavour profiles expressed by each roasting profile.
